OK, this Ambrosia Salad is one that I loved as a kid. Mom used to make this favorite on special occasions. Now I like to make it anytime I can, it's a excellent favorite in Side Dish Recipes to add to your Dinner or as a great light pick in Dessert Recipes too. We as a family just love this Ambrosia Salad with Marshmallows, Pineapple and Oranges. 1 can pineapple, crushed (undrained)

1 can mandarin oranges, (undrained)

Cold water

1 cup boiling water

1 package orange Jello

1 pint whipping cream

2 cups mini marshmallows

1 cup sweetened flaked coconut

maraschino cherries for garnish

Drain pineapple and mandarin oranges, reserving juice. Add enough cold water to juice to measure 1 cup.

In a large bowl, stir boiling water and orange Jello until completely dissolved. Stir in measured pineapple orange liquid.

Refrigerate until slightly thickened, about 1 hour.

While pineapple orange Jello is setting in refrigerator, whip in medium to large bowl whipping cream and white sugar until firm peaks form.

Remove slightly thickened Jello from fridge, blend and fold in whipped cream topping with large spatula until smooth.


Refrigerate 15 minutes.

Blend in pineapple, oranges, marshmallows and coconut.

Spoon into a non stick mold or glass serving dish. You can even spoon into individual serving bowls or cups when cooking for a crowd and you want that extra special individual touch.

Refrigerate 3 hours or until firm. Unmold if using the non stick mold and place on decorative dish, garnish with maraschino cherries if desired. Or if you're using the glass serving bowl, serve right from that. If you're using the individual serving bowls or cups, place at each place setting for that extra special touch, don't forget to add maraschino cherries to each serving bowl or cup for an extra, extra special touch.
