FRENCH BREAD WITH SCRAMBLED EGGS AND BAKED HAM

1 unsliced loaf of French Bread

1/4 cup butter - softened and divided

1/4 cup Hellmans mayonnaise

4 green onions - chopped

1/4 pound (100 grams) baked ham or black forest ham

2 large roma tomatoes - sliced thin

8 large eggs - lightly beaten

1 cup shredded Tillamook Cheese - Medium or Aged Cheddar

table salt or kosher salt

fresh ground pepper corns

Cut french bread in half lengthwise, carefully hollow out top and bottom, leaving 1/2 inch shells.

Combine butter, mayonnaise and green onions together, mixing well, spread inside of shells.

In large pan, melt 1 tablespoon butter. Add eggs, salt and pepper to taste and cook over medium heat stirring occasionally until edges are almost set. Spoon into bottom shell and top with Tillamook Cheese and baked ham. Top with roma tomatoes and cover with Top Shell.

Wrap in greased tin-foil and place on large sheet or cookie pan.

Bake at 375 F for 15 - 20 minutes or until heated through.

Cut into serving size pieces and Serve.

Serves approx. 8 people - Fabulously Tasty!

Tip: Use the leftover french bread for making your own Homemade Croutons. With some added italian spices you will have the family eating out of your hands! The leftovers makes fantastic homemade croutons with your leftover bread. One great pick in Easy Recipes!


SALSA RECIPE

4 seeded and diced roma tomatoes

1/2 medium diced red onion

1 minced jalapeno chili pepper with seeds and stem removed

1 minced serrano chili pepper with seeds and stem removed

1-2 fresh limes - juiced

1/2 cup chopped cilantro

1/2 teaspoon kosher salt

fresh ground pepper corns

In medium mixing bowl, add diced roma tomatoes, onions, lime juice, cilantro, salt and pepper. Stirring well to mix.

Add chiles add a bit at a time as these can be hot. Taste and add more until your desired hotness is achieved. Be careful and wash your hands after handling these spicy little wonders. Add more salt and pepper to taste if desired.

Makes about 3 cups.

Tip:

Set aside some seeds from your peppers and add to your salsa dish if you are an extra spicy fan!

Are you a tomato fan, add more diced roma tomatoes if you like a more of a tomato flavor.

GUACAMOLE RECIPE

3 ripe avocados, peeled and halved with seed removed

1-2 fresh limes - juiced

1/2 teaspoon kosher salt

fresh ground pepper corns

1-2 minced serrano chiles with stems and seeds removed

1/2 medium diced red onion

2 seeded and dice roma tomatoes

2 tablespoon chopped cilantro

2 fresh garlic cloves, chopped

In medium sized bowl, mash avocados with fork.

Add chopped onions, fresh garlic, cilantro, lime juice, salt and pepper and mash a bit more.

Add chiles a bit at a time as these can be hot. Taste and add more until your desired hotness is achieved. Be careful and wash your hands after handling these spicy little wonders. Add more salt and pepper to taste if desired.

Add chopped roma tomatoes just before serving stirring in well. For the Ultimate in an afternoon or anytime gathering serve a deliciously refreshing Strawberry Margarita. If you're not a tequila fan, switch it to a Daiquiri. The Strawberry would be my pick!

Makes about 3 cups.

One of my cooking hints is to make sure you cover this favorite with plastic wrap, this preserves the color of the avocado, refrigerate until ready to use, add roma tomatoes and serve.
